Every year on Easter Sunday starts the same way, you wake up to give your loved ones their easter baskets filled with goodies, have breakfast, go to church (depending on your religious beliefs) and you come back home in your Sunday dress to welcome your family to brunch in the sun! We love spending time together and embracing our traditions, but that doesn’t mean the dessert menu can’t change!

No more settling for the same old easter cake recipes that are usually bunny shaped cake. Here at Homia we like to crank it up a notch with easy easter desserts!

After your guests enjoy your homemade mimosas (regular juice for the kiddos), fritadas, hot dogs and other delicious brunch delicacies...it's time for CAKE! Only the number one dessert for large family fun! So, let’s begin with our top 7 Easter cake ideas that will impress your friends around the picnic table!

Everyone is making carrot cake, serve your party people something different and taste AMAZING! So we chose the next best thing, Make a recipe that screams Easter fun, decorated with traditional Robin's eggs and smothered in coconut cream for a decadent-creamy taste!

Speckled Malted Coconut Cake

You’ll need:

  • Baking spray, for pan
  • 3 cups of cake flour
  • 1 ½ a tsp.of baking powder
  • ¼ a cup of malted milk powder
  • 1 tsp of Kosher salt
  • 1 can of canola oil
  • 1 can of half-and-half, at room temperature
  • 1 cup of sugar
  • 1 tsp.of pure vanilla extract
  • 1 tsp.of pure coconut extract
  • 1 large egg  (room temperature)
  • 2 large egg whites (room temperature)
  • Coconut Buttercream
  • ⅛ a tsp. of brown gel food coloring
  • Phyllo nest
  • Robin's egg candies

How to make it:

  • When using the oven, preheat to 350 degrees F. Always grease 9-inch cake pans (3) before backing and line bottoms with parchment paper cut into 8-inch circles.
  • Mix flour, baking powder, malt powder, and salt in a bowl.
  • Mix in a separate bowl, oil, half-and-half, sugar, vanilla extract and coconut extract, and egg until fully incorporated. Add flour mixture just until mixed, then beat egg whites with an electric mixer at medium-high for 1 to 2 minutes or until thick.
  • Add egg whites into batter until combined.
  • Divide butter between the 3 cake pans. Bake until a toothpick inserted in the center comes out clean (18 to 22 minutes).
  • Let cool for 15 minutes on the cake pan, then place onto a cooling rack to cool completely.
  • Place one layer on a cake plate and frost top with 1 cup Coconut Buttercream. Repeat two more times. Frost sides with remaining Coconut Buttercream.
  • Stir food coloring and 2 drops of water in a bowl. Dip the tip of a wide paint brush into the mixture. Holding the brush a few inches from the cake, carefully fling the mixture onto the iced cake, repeat until you reach your desired effect.
  • Spread Phyllo Nest around the base of the cake, and nestle Robin's egg candies in nest and your set to impress!

You’ll need:

  • 2 Bars of cream cheese (8 oz. each)
  • Softened ½ cup sugar
  • ½ tsp of vanilla extract
  • 2 eggs
  • 12 OREO Cookies
  • 1 kiwi
  • ½ a cup of fresh blueberries

How to make it:

  • Heat oven to 350°F.
  • Beat cream cheese, sugar and vanilla with mixer until blended. Add eggs, mix just until blended.
  • Place 1 cookie in each of 12 paper-lined muffin cups and then, top with cream cheese mixture.
  • Bake 20 min or until centers are almost set. Cool. Refrigerate 3 hours. Peel kiwi, cut into 6 slices, then cut each slice in half. Place 1 kiwi piece on each cheesecake. Top with berries.

Raspberry Pink Velvet Cake

You’ll need:

  • Cooking spray
  • 3 cups of cake flour
  • 1 tbsp of baking powder
  • ½ a tsp. of Kosher salt
  • 1 cup (2 sticks) of unsalted butter, at room temperature
  • 2 cups of granulated sugar
  • 4 cups of fresh raspberries, divided, plus more for decorating
  • 4 large eggs
  • 2 tsp. Of pure vanilla extract
  • ¾ cups of buttermilk
  • 3 drops pink food coloring, (optional)
  • 3 tbsp. of seedless raspberry preserves

Raspberry Cream Cheese Frosting

You’ll need:

  • Meringue kisses
  • Edible flowers, (decorating)

Raspberry Cream Cheese Frosting

You’ll need:

  • ½ a cup (1 stick) of unsalted butter, at room temperature
  • 4 oz. of cream cheese, at room temperature
  • ¼ a cup of fresh raspberries
  • 1 tsp. of pure vanilla extract
  • ½ tsp. of Kosher salt
  • 3 cups confectioners’ sugar

Instructions:

  • Preheat oven to 350°F. Grease and flour 3 (8-inch) cake pans. Then, mix your dry ingredients, flour, baking powder, and salt in a bowl.
  • Beat butter and sugar on medium speed 1 to 2 minutes with an electric mixer or until nice and creamy.
  • Add 1 cup raspberries, and beat until smooth, add eggs, (one at a time), beating until mixed after each egg.
  • Beat in vanilla, then, set mixer to low and pour in flour mixture and buttermilk alternately, beginning and ending with flour mixture, until flour fully incorporated.
  • Mix in food coloring, (Optional) Divide batter among prepared pans.
  • Bake for  23 to 25 minutes.or until the toothpick inserted in the center comes out clean, Cool in pans on wire racks for 10 minutes, then place on a cooling rack and let cool down completely.
  • Toss together preserves and remaining 3 cups raspberries in a bowl. Place one layer on a cake plate and top with 1/2 of the preserve mixtures. Repeat this method one more time. Top with remaining cake layer.
  • To make delicious frosting, beat butter and cream cheese on medium speed for 1 to 2 minutes with an electric mixer until creamy. Beat in raspberries, vanilla, and salt, until raspberries are broken down making it a lovely pink color.
  • Reduce mixer speed to low and gradually add confectioners’ sugar every minute until smooth.
  • Frost top and sides of cake with pinky frosting. Decorate with meringue kisses, edible flowers, and raspberries.
  • Your beautiful pink cake is ready for easter sunday!

Since, we’re on a fruit roll, here comes another fruit cake that you guests will enjoy! It’s like a banana cream pie made cake, and who doesn't like cake!? We’ve adjusted our banana cake recipe and thought we could make a banana cream layer cake for Easter!

Don’t worry, the recipe is the same all you have to do is stack, cream and frost!

You’ll need:

  • ½ a cup (1 stick) of unsalted butter, at room temperature
  • 4 oz. of cream cheese, at room temperature
  • ½ a ripe banana
  • 1 tsp. of pure vanilla extract
  • ½ tsp. of Kosher salt
  • 3 cups confectioners’ sugar
  • Crushed almonds and mint leaves for decorating

How to stack it:

To make creamy banana frosting, beat butter and cream cheese on medium speed for 1 to 2 minutes with an electric mixer until creamy. Beat in chopped ripe bananas, vanilla extract, and salt, until bananas are broken down making it a yellowish color.

  • Reduce mixer speed to low and gradually add confectioners’ sugar every minute until smooth.
  • Now stack, cream and frost one at a time (2 to 3 layers depending on the size of your guest list)
  • Frost top and sides of cake with the sweet frosting. Decorate with crushed almonds and mint leaves.

Air Fried Chocolate Ice Cream Cake

This one is for or chocolate lovers! Every holiday has chocolate somewhere and easter isn’t far behind! Similar to our bana adjustment - we mean masterpiece! - we did the same with this one! We combined our chocolate cake and chocolate fudge brownie ice cream

How to make it:

  • Unlike banana drama above, you’re going to stack, cream and freeze!
  • After you bake 3 layers of our air fried chocolate cake (You can add more)
  • Let it cool completely and chill overnight
  • Make awesome ice cream and freeze overnight
  • Next day - place layer 1 of cake, spread ice cream and stack (repeat)
  • Then frost with ice cream and decorate with kisses and sprinkles
  • Freeze until you’re ready to serve!  

Green and Blue Velvet Cupcakes:

Cupcakes are our favorite type of cake! It’s your own personal cake...that you don’t have to share! RED velvet is overrated anyway and velvet is the best kind of delicacies!

What you need to know:

  • For this velvet awesomeness all you need to do is add blue food coloring to a separate batch to make a color pow combination!
  • This recipe can be adjusted to any food coloring, just in case you want to make a rainbow velvet cupcake batch!
